Chocolate Chip Pancakes with Caramel Syrup

Chocolate Chip Pancakes
2 Cups Flour
1 tsp. Salt
4 tsp. Baking Powder
3 Tbsp White Sugar
2 Whole Eggs
1-½ Cups Warm Milk
⅓ Cup Butter, Melted
2 tsp. Vanilla
3/4 - 1 Cups Chocolate Chips

Preparation Instructions:
1. Preheat your waffle iron according to manufacturer’s instructions.
2. In a large bowl mix together the flour, salt, baking powder and sugar. Set aside.
3. In a separate bowl, beat the eggs. Stir in milk, butter and vanilla. Pour the wet ingredients into the dry mixture and beat until blended. Slowly add in the chocolate chips and mix.
4. Pour batter into the waffle iron, according to manufacturer’s instructions and cook until golden and crisp. Remove the cooked waffle from the waffle iron and continue with the rest of the batter.  Tip:  Continue to stir the batter as you go or else your last waffle will have a large amount of chocolate chips in it.  Although, several people may prefer it that way!

Caramel Syrup
3/4 c. buttermilk
1 1/2 c. sugar
1 stick butter
1 tsp. baking soda
1 tsp. vanilla
Combine buttermilk, sugar, butter, corn syrup, and baking soda in a LARGE pot.  This syrup will boil all over your stove if you put it in a smaller saucepan.  Bring the ingredients to a boil and reduce heat to low (as long as it’s still bubbling, you’re okay). Cook, stirring very frequently, for 8-9 minutes. You’re basically making candy here and candy-making requires constant vigilance.
When it’s done, it should take on this luscious golden-brown color. Remove from heat and add vanilla.There will be foam on top. It tastes just as good, but it’s not super pretty. If you’re into aesthetics, you can skim it off; otherwise, just give it a good stir.
